Cream of broad bean and pea soup

Ingredients

  1. 400g peas
  2. 300g broad beans
  3. 75cl vegetable stock
  4. 100g 30% fat Grand Fermage Crème Fraîche
  5. 1 onion
  6. 1/2 bunch chives
  7. 2 sprigs of parsley
  8. Hazelnut oil
  9. Salt and pepper

Preparation

  1. Finely chop the onion and brown in a pan with a knob of butter. Set aside.
  2. Bring the vegetable stock to a boil and add the peas and broad beans.
  3. Cook for 15 minutes.
  4. Combine with the onions, the 30% fat Grand Fermage Crème Fraîche, the herbs, a dash of hazelnut oil, and seasoning.
  5. Serve hot or cold!
