Brioche French toast with honey-cinnamon apples

Ingredients

  1. 4 slices of state brioche
  2. 2 eggs
  3. 50g vanilla sugar
  4. 20g Grand Fermage unsalted churned butter
  5. 160g whole milk
  6. 3 tbsp. sugar

For the topping:

  1. 2 small apples
  2. 10g Grand Fermage unsalted churned butter
  3. 2 tsp. cinnamon
  4. 2 tbsp. sugar
  5. 2 tsp. runny honey

Preparation

  1. Beat the eggs, milk and sugar together in a large bowl. Dip the brioche slices in the mixture.
  2. Add a generous amount of butter to the pan, then fry the brioche slices for two minutes on each side (medium heat).
  3. Peel and cut the apples into small cubes. Brown the apples in a pan with some butter.
  4. Add in the sugar, honey and cinnamon, and cook for 5 minutes over a low heat. Spoon the apple topping onto your slices of French toast.
