Matcha Tea Flan

  1. 30g Bleu-Blanc-Cœur Grand Fermage unsalted churned butter

    75cl whole milk

    200ml heavy cream

    2 whole eggs + 2 egg yolks

    150g caster sugar

    80g cornflour

    10g matcha tea powder

    1 sachet of vanilla sugar

And don't forget to grade the recipe:


  1. Start by heating the milk and cream together in a pot.
  2. Add in the matcha tea powder. Simmer for a few seconds, then set aside.
  3. In a mixing bowl, whisk together the eggs and egg yolks with the sugar.
  4. Add in the cornflour, then gradually pour in the matcha milk.
  5. Pour everything back into the pot and heat over medium heat until the cream has thickened.
  6. Off the heat, add in the butter cut into small cubes. Mix gently.
  7. Grease and flour a round mould, then pour in the mixture. Carefully smooth out the surface.
  8. Bake at 180° for 40 minutes.
