Christmas Cookies with Jam

Ingredients

  1. 120g unsalted Grand Fermage butter

    250g flour

    2 level tsp. baking powder

    90g sugar

    1 sachet of vanilla sugar

    Pinch of salt

    A few drops of lemon juice

    1 egg

    Raspberry jam (or your favourite flavour)

    Icing sugar for decoration

Preparation

  1. Sift the flour and the baking powder into a large bowl.
  2. Make a well in the centre and add the salt, sugar, vanilla sugar, lemon juice and egg.
  3. Work a little of the flour into the mixture.
  4. Then add the butter in small cubes and knead everything together
  5. until it forms a smooth ball of dough. Leave to rest in the fridge for one hour.
  6. Preheat the oven to 180°C.
  7. Carefully roll out your dough on a work surface and cut into rounds with a pastry cutter.
  8. Cut a small circle in the centre of half of the rounds.
  9. Cook all the rounds in a 180° oven for 8 - 10 minutes.
  10. Leave to cool.
  11. Spread a little jam on the base of each biscuit,
  12. and sprinkle the tops with icing sugar.
  13. Place the tops on the bases and allow to set.
