Ingredients

For the red butter sauce

  1. 100g Salted organic Grand Fermage butter
  2. 250ml red wine
  3. 1 shallot
  4. Pepper

For the cod and potato-carrot mash

  1. 40g salted Grand Fermage butter
  2. 1 pinch nutmeg
  3. handful of flat parsley leaves
  4. 1 pinch pink peppercorns
  5. 250g cod
  6. 4 carrots

Preparation

For the red butter sauce

  1. Make a red butter sauce by following our recipe.

For the cod and potato-carrot mash

  1. Peel and rinse the potatoes and carrots.
  2. Steam or boil them along with the cod.
  3. Once the vegetables are cooked, mash them together with the butter and nutmeg until a smooth puree forms.
  4. Arrange the cod and mash on a plate, and cover with the red butter sauce. Garnish with fresh parsley and pink peppercorns.
